The recipe for a good marquisette
For a marquisette, you will need:
- 2 apples,
- 2 bananas,
- 1.5 kg of oranges,
- 5 lemons,
- 75 cl of white rum,
- 4.5 liters of dry white wine,
- 4.5 liters of lemonade,
- 2.5 liters of sparkling wine,
- 1 kg of cane sugar.
In the evening, wash the lemons and limes and cut them into small pieces or thin wedges. Once it's done, put in a salad bowl and sprinkle cut fruit with dry white wine, sugar and Pulco lemon. Mix and leave to macerate for nearly 12 hours and chill the Perrier, sparkling wine and crémant.
As an aperitif, add the crémant and the Perrier and serve the marquisette with a ladle and in the cocktail glasses. To add a little more flavor, add basil and/or mint leaves. Just before serving, frost the glass with lemon and sugar syrup. To do this, rub the edges of the glass with a lemon wedge, then dip this edge in a plate of sugar.
Marquisette recipe with a dry white wine from Burgundy
Burgundy dry white wine is also perfect for making a marquisette. For 10 people for example, or a bottle of dry white Burgundy wine, 600 g crystal sugar, 1 kg organic sliced lemons. Mix these ingredients and leave to macerate overnight. The next day, strain and keep the lemon slices. At the time of service, put a bottle of crémant or a bottle of champagne. Also put a bottle of Perrier and serve well chilled by adding the slices of lemon preserved in advance.
